HOW YOU GOT STARTED HERE IN SUNNYSLOPE?>>MY BUSINESS PARTNER, DON
TALBOT, AND MYSELF LOOKED ALL OVER TOWN OF WHERE WE REALLY
WANTED TO LAUNCH SCRAMBLE. WE COULD HAVE DONE IT IN A LOT
OF AREAS, BUT SUNNYSLOPE WAS ATTRACTIVE TO US. WE LIVE CLOSE IN THE AREA, JUST
ON THE OTHER SIDE OF THE HILL. FROM THE DIVERSITY OF THE
POPULATION IN THIS AREA, AND HOW BREAKFAST AND LUNCH APPEALS TO
SO MANY DIFFERENT MARKETS AND AGES — THE PROXIMITY TO NORTH
MOUNTAIN WAS A BIG PLUS FOR US. WE GET SO MANY HIKERS AND
JOGGERS IN THE MORNING AFTER THEIR MORNING TRAILS. THE VIEWS OF THE OTHER MOUNTAIN
RESERVES AND RANGES HERE, AND THEN OBVIOUSLY THE EXPOSURE OF
BEING ON 7th STREET FOR ALL THE MORNING TRAFFIC HEADING
DOWNTOWN.>>I’VE ACTUALLY BEEN HERE ON
THE WEEKENDS, AND I HAVE ACTUALLY HAD TO STAND OUTSIDE OF
YOUR DOOR BECAUSE OF ALL THE HIKERS THAT COME HERE BEFORE OR
AFTER A HIKE. IT’S AMAZING THE CUSTOMERS THAT
YOU BRING IN, ESPECIALLY ON THE WEEKEND.>>THE WEEKENDS ARE INSANE, BUT
DON’T LET THE LINES FOOL YOU. IT’S ONE OF THE GREAT BENEFITS
OF SCRAMBLE. IT’S A FAST-CASUAL SET-UP. SO YOU WALK IN, YOU WAIT IN
LINE, AND YOU ORDER YOUR FOOD FROM THE COUNTER. THEN WE EXPEDITE IT AND CONTINUE
SERVICE AFTER THAT POINT. BUT EVEN WHEN YOU’RE OUTSIDE
WAITING IN THE LINE, YOU’RE ONLY ABOUT 10 TO 15 MINUTES BEFORE
YOU ORDER YOUR FOOD. YOU MAY WAIT 30 TO 45 MINUTES AT
OTHER BREAKFAST RESTAURANTS, JUST TO BE SEATED. THEN YOU STILL HAVE TO WAIT FOR
YOUR SERVER AND DRINK ORDERS AND EVERYTHING ALONG THOSE LINES. WE CUT ABOUT 30 TO 45 MINUTES
OUT OF EVERYBODY’S BREAKFAST ON THE WEEKENDS, WHICH IS WHY WE’RE
SO POPULAR AND THE LINES GROW SO LONG.>>I WOULD AGREE, YOU DO MOVE IT
PRETTY FAST. IT’S A TRADITION IN MY FAMILY TO
COME HERE FOR MOTHER’S DAY. MY KIDS BRING ME HERE, AND WE
REALLY ENJOY IT. I ALSO NOTICED THAT YOU’RE A
MEMBER OF “LOCAL FIRST.” CAN YOU TELL US WHY THAT’S SO
IMPORTANT?>>GROWING UP HERE IN PHOENIX,
GIVING BACK TO THE LOCAL COMMUNITY, WE’RE NOT JUST A
“LOCAL FIRST” MEMBER, BUT WE’RE WHAT THEY WOULD CONSIDER A
HYPER-LOCAL TYPE BUSINESS AND RESTAURANT. 90% OF WHAT WE PURCHASE, FROM
OUR SAUSAGES AND CHORIZO FROM SCHREINER’S SAUSAGE, TO ALL OF
OUR EGGS FROM HICKMAN’S, PEDDLER’S SON FOR PRODUCE,
UP AND DOWN THE BOARD. WE TRY TO PURCHASE EVERYTHING
FROM OTHER GREAT, LOCAL ESTABLISHMENTS. I LOVE THAT I KNOW WHERE MY FOOD
COMES FROM, THAT IT’S A TRUCK FROM ACROSS TOWN INSTEAD OF
ACROSS THE COUNTRY. MULTIPLY THAT WITH ALL OF OUR
GREAT LOCAL EMPLOYEES AND THE REVENUE WE CREATE FOR THIS AREA,
AND HOPEFULLY KEEP THOSE DOLLARS HERE IN PHOENIX AND SUNNYSLOPE
EVEN, ALONG WITH ARIZONA.>>I NOTICED, NOW YOU’RE NOT
JUST THIS STORE. YOU’RE REALLY OPENING UP QUITE A
FEW STORES. YOU DON’T JUST OWN SCRAMBLE. YOU ALSO OWN ANOTHER LOCAL
RESTAURANT IN DISTRICT 3.>>THAT’S CORRECT. WE ALSO HAVE THE HALF MOON
SPORTS GRILLs. WE’VE HAD THOSE OPEN NOW FOR
ALMOST 18 YEARS. WE WERE FORTUNATE ENOUGH TO OPEN
OUR SECOND SCRAMBLE LOCATION FOUR YEARS AGO OUT AT SCOTTSDALE
AND LINCOLN. WE HAVE PLANS FOR OUR NEXT
OPENING IN JANUARY AT 24th STREET AND CAMELBACK.>>I’M PRETTY EXCITED ABOUT
THAT. MY DAUGHTER LIVES AROUND
44th STREET AND CAMELBACK, SO I KNOW WE’LL BE GOING TO
YOUR PLACE FOR BREAKFAST, CLOSE TO WHERE SHE LIVES. CAN YOU TELL US, TOO, ABOUT WHAT
ARE YOUR FAVORITE DISHES, AND WHAT ARE YOUR SIGNATURE DISHES
HERE AT THE RESTAURANT?>>I LIKE TO GO FOR EITHER SWEET
OR SAVORY WHEN I EAT BREAKFAST. WE HAVE AN AMAZING FRENCH FRENCH
TOAST THAT WE DO WITH A HAND-CUT FRENCH BAGUETTE, WITH A VANILLA
CUSTARD. WHEN I GO SPICY, I’LL EITHER
VENTURE INTO THE SANTA FE EGGS BENEDICT, WHICH IS DONE WITH A
HOMEMADE JALAPENO CORNBREAD BASE AND A BLACKENED HAM AND CHIPOTLE
HOLLANDAISE. WE ALSO HAVE A CHILE VERDE
BURRITO WHICH INCORPORATES SOME AMAZING HATCH GREEN CHILES
REDUCED DOWN TO A CREAM SAUCE, WITH A HOMEMADE PULLED PORK
WRAPPED UP IN A BURRITO WITH ALL SORTS OF GREAT SEASONED VEGGIES. IT’S A PRETTY DIVERSE MENU. WE ALSO HAVE THE NATIONAL
TRADEMARK ON A BRIZZA, WHICH IS OUR VERSION OF THE BREAKFAST
PIZZA. IT’S A HAND-TOSSED DOUGH, WHERE
WE PUT OUR OWN HOLLANDAISE DOWN AT THE BASE, INSTEAD OF A PIZZA
SAUCE. HICKMAN’S EGGS, AND THEN A
VARIETY OF TOPPINGS FOR ALL THE DIFFERENT FLAVORS AND OPTIONS. MY FAVORITE IS THE GOUDA, WHICH
HAS SMOKED GOUDA CHEESE AND APPLEWOOD BACON.>>I ACTUALLY LIKE THAT ONE,
TOO, AND I’VE TRIED IT A FEW TIMES. I ALSO NOTE THAT YOU HAVE A BIG
PATIO OUT HERE. YOU’RE VERY DOG-FRIENDLY.>>ABSOLUTELY, PET-FRIENDLY
PATIO. SO BRING YOUR BEST FRIEND, THE
FOUR-LEGGED KIND, OUT. WE PROVIDE DOG BOWLS AND WATER
AND EVERYTHING FOR THE ANIMALS. IT’S A GREAT ENVIRONMENT FOR
KIDS AS WELL. WE HAVE CARTOONS UP ON ONE OF
THE TVs. WHEN WE WERE TRYING TO PERFECT
WHAT WE THOUGHT WAS THE BEST BREAKFAST PLACE, IT NOT ONLY HAD
TO WORK FOR THE BUSINESS PERSON, BUT FAMILIES ALIKE. BETWEEN THE WICKY STICKS AND THE
PETS, OR THE CARTOONS ON ONE OF THE TVs, YOUR KIDS ENJOY THE
BREAKFAST. MINE ALWAYS WANT TO COME HERE ON
THE WEEKENDS. MY WIFE AND I LOVE IT BECAUSE WE
CAN ACTUALLY SIT AND ENJOY A MEAL WITHOUT TRYING TO WRANGLE
OUR KIDS AND KEEP THEM AT THE TABLE.>>SPEAKING OF KID-FRIENDLY, CAN
YOU TELL US ABOUT YOUR YOUTH COOKING CLASSES?>>IT’S ONE OF OUR FAVORITE
EVENTS. WE DO THEM EVERY QUARTER. WE LIMIT IT TO ABOUT 16 CHILDREN
PER CLASS, AGES 5 TO 12. THE SMILES ON THE KIDS’ FACES AS
THEY LEARN HOW TO COOK DIFFERENT SIGNATURE DISHES. SOME ARE ON OUR MENU. SOME ARE JUST COMPLETELY OUTSIDE
THE BOX, DEPENDING ON THE TIME OF YEAR. WHEN WE DO THE DECEMBER ONE,
WE’LL TEACH THEM HOW TO DO DIFFERENT HOLIDAY DISHES. IN THE SUMMER, IT MAY INVOLVE
SUN ORCHARD, ONE OF OUR LOCAL JUICERS, AND HOW TO BRINE PORK. IT’S ALL ACROSS THE SPECTRUM. BUT THE KIDS LOVE IT. THEY LITERALLY GET BACK IN OUR
KITCHEN WITH OUR CHEFS. WE HAVE AN AMAZING CULINARY TEAM
THAT TEACH THE KIDS. THEY DO ALL THE HANDS-ON
TECHNIQUES. THEY LEARN THE DIFFERENT ASPECTS
OF THE FOOD CHEMISTRY AND HOW THE COOKING PROCESS TAKES
PLACE. THEY ALSO GET TO GO HOME WITH
SOME FUN GOODY BAGS. EVERY ONE OF THEM IS SPONSORED
BY ONE OF OUR LOCAL VENDORS, WHICH ROTATES ON EACH OF THE
